Chewy Flapjacks

These flapjacks are one of my absolute favourite BBC Good Food recipes - I often throw these together for Hubs to take into work or when we have people coming round.

At a glance they are all sugar and not much health but when we take a step back and have a think about the protein or supposedly healthful flapjacks we eat on the run which are choc full of preservatives and additives - these are not. We know every ingredient on the list and if golden syrup isn’t your jam it can be swapped for maple syrup or honey.

If you have some left over after entertaining, these can great pre-work out snack. Consider eating a square approximately 45 minutes before your training session. The sugar will be broken down quickly whilst the oats will provide you with a much slower release fuel. They can also be used as a re-fuel food to replenish your glycogen stores (energy readily available to burn in the body) after an intense training session or finishing up endurance training - a session lasting longer than 90 minutes.

Or… maybe you just like flapjacks… these can also just be enjoyed because you want to as part of your balanced diet.

Ingredients

375g Butter
225g Golden Syrup
200g Soft Brown Sugar
500g Oats

Method
Set oven to gas mark 3, 160 C.
Grease a 20x30cm baking tray and line the bottom with baking parchment.
In a large saucepan melt butter, sugar and syrup until all mixed and runny
Take the saucepan off the heat and stir in the oats until all combined.
Pour the mixture into the prepared baking tray and smooth even with a spatula.
Place in the centre of the pre-heated oven and bake for 20 - 25 minutes, until golden. (If you prefer a more chewy flapjack, it should still have a slight wobble when you take it out of the oven).
Allow to cool in the tin for 15 minutes, then mark lightly where you want to cut into squares. Cover with a clean tea towel until completely cooled.
Cut into squares and turn out.
